I welcome you on my Blog to represent  “ Namma North Karnataka Special “ yes I am from North Karnataka Hubbali (Hubli)  and we are known for the food we prepare and yes, of course, it is loved by many 🙂

Our North Karnataka is not only known for its food, but we have a great history to….

 

North Karnataka is also known as “  Uttara Karnataka & also to be called as Karu Nadu ”

Uttara Karnataka is well known for its mouth-watering  Cuisine of Karnataka we have a long list to go if we spend valuable gesture on it. Here I have picked up some recipes which we prepare for festivals, functions & even some time on daily bases.

 

Ennegayi Palya ( Stuffed eggplant/brinjal)

 

Ingredients used:-

Brinjal – 5

Onion- 1big

Garlic- 1full

Ginger- 1coin size

Curry leaves – 10

Coriander – half cup chopped & for garnish

jaggery – 1tbsp

Salt – to taste

Peanut –  10

Jeera- 1tbsp

Mustard- half tbsp

Tamarind pulp- 1tbsp

Coriander seeds – half tbsp

Fresh coconut – small half cup

Garam masala – 1tbsp

gureulu powder ( karal) – 1tbsp

Oil – 2tbsp

Hing – 3pinch

Turmeric – half tbsp

Green chilly – 5

Here we go towards the method:-

1- take a pan to add oil and fry the brinjal till they get soft & keep aside

2-  now in the same pan add oil once heated add  jeera, mustard,  Coriander seeds, peanuts, garlic, ginger and mix well

3- now add curry leaves, chilly, onion and fry for some time till onion gets golden brown

4-now add grated coconut, & coriander & mix all & fry for sometime.

5- Time to add now tamarind, turmeric, jaggery, salt & some garam masala, & hing & Gural powder cook for sometime and off the flame & let it cool.

6- now grind the cooked masala for fine paste

7- stuff the brinjal with the grinded paste

8- take a pan to add very little oil and add the stuffed brinjal and mix well and add the leftover gravy.

9- now add water and cook for 5-10mnts till the brinjal gets well cooked & garnish with coriander and add 2-3 pinch of garam masala (optional)

10- serve hot with roti.

Madikekaalupalya

 

Ingredients used:-

madikekaalu (millets) – 1 bowl soak 5-6 hours & drain the water and keep the sprouts to come for the overnight

onion – 1 chopped

green chilly – 5

garlic – 1 full small

curry leaves – 5-6

coriander –  garnish

gurellu powder ( Karal) – 1tbsp

garam masala – 1tbsp

tamarind pulp – 1tbsp

jaggery – half tbsp

water – for cooking

oil – 3tbsp

hing – 3-4 pinch

 

method:-

1- take a pan to add oil, once heated add jeera, mustard, garlic, green chilly, curry leaves & onion and mix well and fry for some time

2-now add the millets and fry well for 5mnts

3- now add salt, turmeric, garam masala  &  Karal powder  mix well

4- now add  tamarind pulp & jaggery and add little water & cook for sometime

5- garnish with 3pinch of garam masala & coriander

6- serve hot with roti.

 

 

Red Chilly chutney 

Ingredients used:-

dry red chilies – 30

garlic – 2

jeera – 1tbsp

curry leaves – 10

coriander – little

mustard – half tbsp

oil – 1tbsp

water – for soaking & grinding

hing – 3pinch

tamarind pulp – 1tbsp

jaggery – 1tbsp

method:-

1- soak overnight chilies

2- next day boil them for 8mnts

3- now blend it by adding  garlic, curry leaves, little coriander, salt, tamarind, jaggery, jeera with very little water

4- grind till you get the chutney consistency

5- for tadka add oil, jeera, mustard, curry leaves, and hing

6- serve with roti, idli, dosa, bread, paratha.

 

Koreda hittina palya

 

Ingredients used:-

kadale hitu ( besan) – 1cup small

green chilles – 5-6

onion – 1 chopped

garlic – 1 small

ginger – 1tbsp

curry leaves – 10

coriander – garnish & grinding

dry coconut – 6-7tbsp

jeera – 1tbsp

mustard – half tbsp

tamarind pulp – 1tbsp

jaggery – half tbsp

til – 1tbsp

water – for cooking

turmeric- half tbsp

salt – to taste

oil – for cooking and greasing

 

 

method:-

1- for grinding – in the jar add chilly, ginger, garlic, jeera, coconut, tamarind, jaggery, curry leaves, coriander blend it to a fine paste

2- now take a pan to add oil, once heated add jeera, mustard, onion, curry leaves  and fry for some time

3- now add salt to taste and the grinded paste & water and give it a boil for 3-4 mins

4- in meanwhile take a plate and grease it with oil

5- once water  starts boiling add the besan and keep staring till it gets like a dough

6- now add this to the plate which is greased with oil and spread it all over

7- now let it cool for 3mnts and garnish it with dry coconut, coriander and til and cut it into square pieces as shown in the pic above

8- serve with hot rotis and rice too…
